I'm gradually amassing a lovely collection of cupcake books, so thought it would be nice to post about them and share my thoughts.  Sometimes it can be a bit, no a lot, disappointing to buy a book only to browse through in more detail at home only to discover that not one of them will be practical to bake! This book is just so lovely to look at, no, salivate over!  I want to bake every single creation!

Today I made these scrummy Lemon Meringue cupcakes, a special request by my partner! I've never shared his love for Lemon Meringue but thought it would be nice to make him his favourite.

Well I made my English Summer Garden Cupcakes today but guess what? It's now pouring down with rain in what was forecast to be a hot and sunny day here in Kent!

I have to confess I was a bit worried before I started baking because I wondered how on earth the wafer cones were going to survive the oven!

When I first started out baking cupcakes I managed to get slightly confused over all the different recipes!  I started to realise that there zillions of cupcake recipes and that I was changing the recipe for the cupcake base slightly each time depending on what recipe I was following.  So to simplify things, I decided I should just have my "go to" sponge cupcake recipe and then experiment with different flavourings and frostings. So now I generally use my own tried and tested recipe to bake the cupcake and spend most time experimenting with frosting.
